Hello! Hope you all had a good week. I’m happy to report that the headache is gone! Yay! It lasted through mid-week and then one morning I woke up and there was no trace of it. I’m feeling good, and still not hungry!
Mountain Man is still away, and so I have been sticking to my egg wraps for dinners. For lunches, I grabbed some canned soups that we had in the pantry. At 20-27 grams per can, it’s not as low in carbs as I would like, but I just didn’t feel like cooking. Same coffee and smoothies for breakfast. I have not weighed in yet, but I feel good and like I am losing…
Looking ahead to when MM returns, I have spent some of this week figuring out how I can make some of our favorite recipes fit into this new LCHF / Ketogenic way of eating. I am the primary cook in our little cabin household. I do not want to increase my cooking responsibilities (or dish washing – I hate washing dishes!), and so my sneaky plan is to make this food taste so good that he will enjoy it with me (kidding – we talked about it, and he’s curious to try this with me)! I also want to keep the recipes as simple as possible, so that I will always be motivated to cook fresh, whole food!
