I have been reading a lot about the many ways to use cauliflower as a substitute for other high-carb foods. So far, we have tried cauliflower rice, which we found just OK, with the meat based meal we tried it with. We’re going to try it again with something that is more of a casserole or sauce-based dish in the future and see how that works.
Today we tried a LCHF / Ketogenic pizza with a cauliflower, egg and cheese crust. We opted for traditional toppings: tomato sauce, pepperoni and more mozzarella cheese. It was nothing like a traditional flatbread pizza… but it was pretty good! Very filling. A couple of slices were enough for me. The crust holds together well enough that you can even fold over the greasy slices, New York style. 🙂
We’ve heard that it is even better after the first day and so we’re looking forward to the leftovers this week!
