And the challenges continue! We traveled to a small, invite only festival last weekend and stayed overnight. The tradition is pot luck each night, with all participants contributing what they can. This generally results in a whole lot of pasta on the table each night! That was fine by me prior to adopting the LCHF / ketogenic way–I loved pasta salad and was happy to try a little of each creation on the table, until I was full up.
But now, I needed a new strategy. Something I hadn’t noticed in prior years is that there is always something cooking on the grill! I was able to find plenty of meat, and some good grilled vegetables as well. Combined with our egg wrap sandwiches (which travel very well) for breakfasts and some peanut butter and cheese to snack on in between, plus plenty of ice cold seltzers to get us through the hot weather and we did just fine!
Our contribution this time was to the dessert table–I ended up baking up a storm with some of the carb-rich kitchen staples that we will no longer be able to use at home. Next year, we will bring plenty meat and veg to share for the grill, so that we will be sure there is something there for us to enjoy.
