The next level

What a difference a week can make. I have been laying reeeeaaaaallly low here these last few days, after all of the excitement this past month. Basically just eat, work, sleep here. Now that I have some weekend time, I am taking a good look at where I can trim some more carbs from our initial diet plan.

I still refuse to give up my morning smoothie, but I will be cutting the banana from 1 whole to one half. That should help. Bananas are loaded with sugar.. They are also loaded with other nutrients and they add a lot to the smoothie, so I’m gonna try it this way and see what happens.

I also refuse to give up my one glass of wine at cocktail time. This is a time here at our little cabin when everything else goes on hold and we just sit and enjoy the day. This is something I first appreciated on a trip to Key West years ago. At sundown, everything stops, an urn of Tequila Sunsets appears and everyone enjoys a drink and watches the sunset. I like the idea of marking and appreciating each passing day this way. Part of our reasoning for simplifying our lives was to create the space to do exactly this kind of thing.

What I can do at this point is eliminate the lazy cans of soup I have been bringing for work lunches! Such a cop out, though it did let me focus on learning a new way of cooking for a while. Each one of those cans had anywhere from 20-30 carbs, and not enough fat to keep me full without snacking before dinner. I can do better than that. I’m on the hunt for some quick and easy soup recipes that I can whip up in bulk on Sundays and bring with me during the week.

Another thing I want to try to do better with is making sure our meals have enough fat to hold us over to the next without snacking. I’m sure there will always be times when a quick cheese stick or peanut butter spoon (mmmm!) will be necessary, but I would like for those to be fewer and further between.

So, I am hitting the web. I will be sure to report back with what I find!
