We enjoyed these LCHF / Banting Bacon Wrapped Stuffed Chicken Breasts for dinner a few nights this week. Generally, I try to cook only two times per week, so I made six servings.
This was a brand new recipe for us. I made two servings exactly as the recipe directed, and then substituted some smoked gouda for the cheddar on two more, and finally some good quality blue cheese for the cheddar on the remaining two servings.
The cheddar servings were good, but a bit bland for our taste. The smoked gouda was a bit better, but still sort of bland. The blue cheese version was fantastic!
To punch up the flavor on this meal, and add some vegetables, I added a large spinach and fresh tomato salad on the side, with homemade Italian vinaigrette. I served everything on the same plate, so that the flavors could be combined if desired.
MM also experimented with adding some Buffalo sauce to the blue cheese version and said that it was great that way as well!
This is a meal that could work well for company! It looks quite fancy on the plate. 🙂
