Keto Roll-ups

Hello! Hope everyone had a great weekend!

MM and I had to travel this weekend for a side project we’re working on together. We weren’t sure what the food situation would be at our destination, and so we cold-packed a few trays of these tasty and filling deli “sushi” wrap-ups to bring along. They were easy to make and made a great lunch!

Dilly Chicken “Sushi” Ingredients:
  • 1/4 lb thickly sliced deli chicken
  • 4 oz cream cheese, softened
  • 4 Dill pickle spears
Directions:
  1. Spread the cream cheese evenly over the chicken slices
  2. Add a dill pickle to one of the long ends of a slice
  3. Roll the cheese covered slice tightly around the pickle to make a tube
  4. Refrigerate until firm
  5. Slice the tube into individual “sushi” pieces with a sharp knife
  6. Keep chilled until ready to eat
Tomato Ham “Sushi” Ingredients:
  • 1/4 lb thickly sliced deli ham
  • 4 oz cream cheese, softened
  • Cherry tomatoes
Directions:
  1. Spread the cream cheese evenly over the ham slices
  2. Add a series of cherry tomatoes to one of the long ends of a slice
    (cut them in half if they are over 1/2 inch in diameter)
  3. Roll the cheese covered slice tightly around the tomatoes to make a tube
  4. Refrigerate until firm
  5. Slice the tube into individual “sushi” pieces with a sharp knife
  6. Keep chilled until ready to eat
